This is a unique chicken recipe. A large chicken cooked in half a bottle of wine isn&#8217;t as economical as a pot roast made with a cheaper cut of meat in plain stock, but still … Although I nearly always use dried herbs and spices, fresh rosemary is perfect for this. (It&#8217;s about the only edible thing I have growing outside in the garden at the moment so I do tend to use it all the time.) One of those very large, oval casserole dishes with a domed lid is ideal for pot roasting chickens, but if you haven&#8217;t got one and your chicken is too big to put a lid on, just cover the casserole completely in foil. Here are ingredients and easy directions:</p>
<p><strong>BEST CHICKEN AND <a href="http://www.whitewineexperience.com" target=_self>White Wine</a> RECIPE</strong></p>
<p><strong><em>INGREDIENTS :</em></strong></p>
<li>1 chicken (any size)</li>
<li>Carrots</li>
<li>Celery</li>
<li>Onions</li>
<li>2 or 3 sprigs of fresh rosemary</li>
<li>½ bottle white wine</li>
<li>½ pint (250 ml) chicken or vegetable stock</li>
<li>A little butter or olive oil</li>
<li>Salt &amp; pepper</li>
<li>Instant gravy granules</li>
<p><strong><em>DIRECTIONS : </em></strong></p>
<p><strong>1. </strong>Preheat the oven to Gas Mark 2 &#8211; 3 (160-170ºC).</p>
<p><strong>2. </strong>Wash, peel and chop the onions, carrots and celery whichever way you like.</p>
<p><strong>3. </strong>Put the chicken in the casserole dish; rub a little butter or olive oil over the skin, season with salt and pepper and surround the chicken with the chopped vegetables and rosemary.</p>
<p><strong>4. </strong>Make ½ pint (250 ml) of chicken or vegetable stock with one stock cube and pour the stock and wine into the casserole.</p>
<p><strong>5. </strong>Cover with a lid or a tight layer of foil and cook in the oven for about 3 hours; check if the chicken is cooked by sticking a sharp knife or skewer into the leg to see if the juices are running clear.</p>
<p><strong>6. </strong>When the chicken is carved up and the rest of the meal is ready, make gravy with the white wine stock; the easiest way is to gradually add the stock to instant gravy granules until you get the consistency you want.</p>
<p><strong>Recipe Tip :</strong> As long as you seal the meat first you can&#8217;t really overcook a pot roast as long as it&#8217;s in a really low oven; approximately Gas Mark 2 (150-160ºC) is ideal. That last half hour is the one that makes all the difference between the meat being simply &#8216;done&#8217; and perfectly tender, so don&#8217;t be afraid to leave it in the oven for a good 3 ½ or even 4 hours.</p>

<p>So how does white wine become pale color devoid of any red in the first place? There are two main ways to obtain it. First by not using red grapes. This is the most common way that average people know to answer if you ask them. There are lots of grapes that are not red, such as greenish, or golden yellow, or greenish yellow or light pink yellow. All these will yield you this white beverage.</p>
<p>However there is another way to obtain it by using red grapes. It does sound surprising at first, but red grapes, or better said the juice of red grapes (without any skin) is used to create what is nowadays called white wine. Basically the the red pigmentation in the grapes is only in the skin, but not in the actual flesh, so any juice of red grapes can successfully yield this white beverage. One of the most common types made of red grapes is champagne.</p>
<p>Here are some additional types of white, or aperitif wines that are commonly used:</p>

<li>Fresh and unoaked wines &#8211; these are light and very crisp and dry. You can find several Italian ones such as the Soave and Pinot Grigio in this category</li>
<li>Earthy wines &#8211; they are also dry but full bodied with an earthy flavor to them. French ones are usually known for their earthiness in taste</li>

<p>Gewürztraminer&#8217;s straight and apparent charm has made it a popular varietal in almost every spot of the wine world. Excellent examples of &#8216;New World&#8217; Gewürztraminer have surfaced from British Columbia, Oregon, and Washington State and in New Zealand, as well as from cooler microclimates in California and Australia. In Europe, individual and remarkable wines are Gewürztraminer based wines are produced in Austria, Germany, and northern Italy. The best Gewürztraminer vines are found along the slopes of the Vosgnes Mountains, in France&#8217;s Alsace region. Gewürztraminer bottled as a single varietal creates wines with extremely compound perfumed qualities and high natural alcohol. One of Alsace&#8217;s &#8216;noble&#8217; varietals, along with Pinot Gris, Riesling and Muscat, Gewürztraminer at its best is in a class of its own. Wines are often full of exotic fruit such as lychee and rose petals. They also have a full, rich &#8216;oily&#8217; mouth feel, with dry, acid appearance. If &#8216;Gewürz&#8217; is grown in warmer climates, there is inclination to be sticky and lose varietal character, and in very cold climates the wines tend to be oddly neutral to grapefruit like.</p>
<p>Gewürztraminer is predominantly fussy about soil and climate. The vine is hearty, even boisterous, but it hates chalky soils and is very vulnerable to disease. It buds early, so is very prone to frost, needs dry and warm summers, and ripens randomly and late. Its natural sweetness means that in hot climates it becomes blowsy, with not enough acidity to stabilize the vast quantities of sugar. Nonetheless, picking early to hold on to the acidity means that the varietal fragrances don&#8217;t develop, and these aromas may be further watered down by over cropping in an effort to surmount the low yields.</p>

There are only a few red and white wines that truly get better with age. The wine aging process is completely dependent upon the presence of tannins which help slow the oxidation process. Tannins are the result of the grape skin, and oftentimes seeds, fermenting with the grape juice to create better aging potential. Lighter, fruitier wines are not meant for aging.</p>
<p><strong>Red Wine Aging</strong></p>
<p>Many red wines, with proper storage, really do get better as they age. Wine makers often use the entire grape in production which increases the amount of tannins in the fermentation process. Wine makers monitor the level of tannins present by manipulating the &#8220;cap&#8221; created when the grape&#8217;s skin rises to the top of the juice. Tannins become less bitter as sediments form at the bottom of the bottle. The maturity of a wine can be gauged by the presence and amount of sediment present. Wines such as Cabernet Sauvignon and Bordeaux, for example, will improve and mellow for up to 15 years, while Zinfandel and Pinot Noir will age well for up to 10 years after the vintage date.</p>

<p>Most white wines should be enjoyed while they are young and fresh. The tannin compounds present in red wines are absent from the majority of white wines. <p>Young wines full of tannins can be undesirably bitter and often undrinkable. When aging wine, it should be placed on its side in a dark, cool (55 degrees) place for a few years and gradually, the tannins youthful astringency will mellow. Once the wine is past its prime, it gives off a more amber hue.</p>

<p>White wines are typically served chilled (unlike reds which are best served warm). This is often a good rule for beginners.</p>
<p>A common understanding of the word &#8220;chilled&#8221; will greatly enhance the beginner&#8217;s enjoyment. The optimal temperature to serve white wine is usually between 40 and 55 degrees Fahrenheit. More specifically, some whites (rich whites like chardonnay) are best at the higher end of this range. Other whites (like tart whites) are best served at the lower temperature range. Sparkling whites should be served more in the middle of the temperature range.</p>
<p>It is important to note that variations in wines such as tannins, percent of alcohol and fruit content affect the necessary temperature to serve white wine. For this reason there is still much debate on the subject.</p>
<p>Compare this recommendation with the average refrigerator temperature, which is 37 degrees Fahrenheit. Most refrigerators are, in theory, too cold for directly serving white wine out of. White wine served straight from a home refrigerator may taste dull or bland. At the very least, it will be difficult to distinguish fruit or oak flavors when it is too cold.</p>
<p>Check your refrigerator&#8217;s interior temperature if you are unsure. Purchase a thermometer designed for the inside of a refrigerator.</p>
<p>Alternatively, you can pour a glass of liquid that has been thoroughly chilled in your refrigerator. Then, test the liquid with a liquid thermometer. (Make sure it&#8217;s able to register low temperatures.). This will give you a better idea of your own home refrigerator&#8217;s internal temperature.</p>
<p>Other factors also affect the temperature. Some sections of your home refrigerator are cooler than others (like the top shelf versus the bottom shelf or the shelf versus the door). You may want to test different areas of your refrigerator to find the spot with the most optimal temperature for storing white wine.</p>
<p>It&#8217;s likely that your refrigerator will be much cooler than 40 to 55 degrees. If so, wine growers recommend letting the bottle sit in room temperature for a few minutes (or more) before serving. This will allow the temperature to rise to the appropriate range and the flavors to be brought out before serving.</p>
<p>Serving white wine at the correct temperature will allow the consumer to better distinguish flavors.</p>

Surprisingly, while many white wines are best in their youth, a few rare breeds get better with age.</p>
<p>Pinot Grigio has become one of the most readily identifiable white wines. The grape used to produce Pinot Grigio is a mutated version of the darkly complex red wine Pinot Noir, giving Pinot Grigio a slightly weightier taste than other white wines. Comparable to the sensation of inhaling the vapors of a burbling freshwater river, Pinot Grigio initially presents with a smooth, feathery taste. A perfect accompaniment for very delicately spiced food, such as a perch or sea bass dish, this wine will not overwhelm the flavor of the fish, but will contribute to an overall feeling of joviality and camaraderie. Some vintages emphasize Chardonnay&#8217;s buttery flavor. Usually best when served during its youth, Chardonnay provides an elegant balance for a rich meal.</p>
<p>In certain specialized regions of the world, Chardonnay can be refined into what is arguably the finest wine, the white burgundy. Depending on the particular vintage, a white burgundy will become more flavorful and complex with age. Such varieties as Grenouilles, Les Preuses and Blanchot are best after ten years, and make exquisite additions to a meal of sauteed trout. For the most memorable experience, a fine white burgundy is best stored in a specialized wine refrigerator, which will maintain a specific temperature and minimize vibration.</p>

<p>Some might think that selecting great wines for Thanksgiving is a huge challenge because there are so many different palates to try to please. However, while the host of a meal might try to provide a wide variety of food dishes to please everyone, it&#8217;s not hard to provide a variety or two of great wines that go perfectly with these types of meals.</p>
<p>It&#8217;s probably a great idea for the host of a Thanksgiving meal to provide a variety of both red and <a href="http://www.whitewineexperience.com" target=_self>White Wine</a>. This should generally cover all of the bases, when it comes to pleasing different palates, and when it comes to providing a wine that pairs well with many different tastes.</p>
<p>Here are some suggestions that you might want to use for your upcoming Thanksgiving gathering:</p>
<p><strong>The Whites: You&#8217;ll want to select young, lively, fruity wines</strong></p>

<li>A great wine that goes well with just about everything is the classic Sauvignon Blanc. It&#8217;s a dry wine, and it goes well with poultry and with vegetables.
